  • 2 tablespoons cornflour
  • ¾ pint water
  • ½ oz.

Method

Mix the cornflour to a paste with a little of the water. Add the rest of the water and pour into a saucepan. Cook, stirring with a wooden spoon, over low heat until thickened. Stir in the butter. Remove from the heat and cool slightly. Stir in the eggs, the lime juice and rind, and the sugar. Cook, stirring, over very low heat for about 5 minutes, or until the mixture has thickened.
