  • 2 lb. sweet potatoes
  • 4 oz. unsalted butter, melted and cooled
  • ¼


Peel the sweet potatoes, chop coarsely and grate in a blender, bit by bit, to a medium consistency. Put into a large mixing bowl and add all the other ingredients, mixing thoroughly. Pour into a greased rectangular baking dish. Bake in a 400°F (gas 6) oven for about 45 minutes
