Roti simply means bread, and this is the term most often used in Trinidad for parathas, which is what these are. They are of Indian origin, but like everything else in the Caribbean, have evolved from the original. One 12-inch roti makes a magnificent lunch when a generous dollop of curried chicken, kid, shrimp or potatoes is placed in the centre, and the bread folded over it like an envelope.
