Method

Mix the coconut milk and sweet potato thoroughly in a bowl with the nutmeg, cinnamon, butter, sugar and lime rind. Fold in the eggs. Pour the mixture into the pastry shell and bake in a 400°F (gas 6) oven for 30 minutes or until set.
