Ingredients

  • 1 teaspoon active dry yeast
  • 2 teaspoons plain flour
  • 2 oz.

Method

Mix the yeast and flour with 3 tablespoons lukewarm water, cover and leave in a warm place until it is bubbly. Peel the fresh ginger root and crush with the flat side of a cleaver. Put into a large bowl and pour on the boiling water. Cool. Add the sugar, lime juice and rind, and stir to mix thoroughly. Spread the yeast on the slice of toast and add. Cover and stand in a warm place for 24 hours.
