  • 2 cups coarsely chopped ripe mango
  • 2 oz. sugar, or to taste
  • ¾

Method

Rub the mango through a sieve. Combine the sugar, water and orange rind in a saucepan and heat, stirring, until the sugar has dissolved. Cool and add to the mango purée and fruit juices. Refrigerate. Serve in tall glasses over ice cubes.
