  • 1 small ripe papaya, weighing about 12 oz.
  • 6 tablespoons coconut milk, or


Peel the papaya, cut in half and remove the black seeds, and chop fruit coarsely. Combine the papaya, coconut milk, lime juice and rind, sugar, vanilla and ice in an electric blender and blend at high speed until the mixture is smooth and thick. Serve in chilled tumblers, garnished with lime slices.
