Sugar does not dissolve readily in alcohol, and for this reason caster sugar is specified in drinks. Simple syrup gives a much smoother drink and is very easy to make.

Ingredients

  • 1 lb. granulated sugar
  • ¾ pint cold water

Method

Combine the sugar and water in a bowl. Stir from time to time until the sugar is dissolved. Use in drinks instead of sugar; ½ oz. (1 tablespoon) simple syrup equals 1½ teaspoons sugar.
