Breadfruit chips have been making a comeback in Barbados over the last few years at popular casual dining spots. The taste rivals traditional french fries, but prepare to feel stuffed after eating just two chips. Dip them in ketchup or barbecue sauce.

  • ½ fresh breadfruit (see Island Tip)
  • Canola oil

Method

  1. To get half a fresh breadfruit, cut a whole fruit in half, peel off the skin, and remove the heart. Slice each piece into crescents. Pat the slices dry.
  2. Heat about ¾ inch (2 cm) of oil in a large, heavy skillet to medium-high heat. Carefully add the breadfruit to the oil and fry for about 3 minutes on each side, until chips are golden brown. If chips are browning
