Eggplant Choka

Let us go to South America, to Guyana. Although Guyana lies on the continent of South America, it is the only English-speaking country on the continent, and it is a part of the English-speaking Caribbean. Guyanese cuisine is varied, but one thing that sticks out in my mind is choka. Choka, defined by Cynthia Nelson in her popular blog Tastes Like Home, refers to
