This is my take on jug-jug, a Barbadian Christmas pudding usually made from leftover pigeon peas and ham. It is thought that the original recipe for jug-jug was derived from the Scottish dish haggis, which may have been brought to Barbados by Scottish indentured servants. The dish was transformed by local ingredients, using pigeon peas as the base of the dish and millet as a thickening agent. This dish is a great high-protein entrée for the winter season.
