Pelau is a flavorful rice dish, usually colored with browning. This pelau recipe is Barbadian-style. Do not confuse it with Trinidadian pelau, which uses pigeon peas and is cooked in coconut milk. Pigeon peas are optional in this recipe, but they will increase the nutritional value of the dish. Either way, it is a satisfying one-pot meal. I love it with Trinidadian Coconut Chutney or Bajan Pepper Sauce.
