It is said that Barbados has some of the biggest pasta lovers in the Caribbean. Some Bajans eat pasta nearly every day. If it isn’t macaroni pie, it’s lasagna. The most common type of lasagna is a Bolognese, which I’ve recreated here with a vegan twist. The TVP or seitan is cooked up in a sauce; I recommend using a roasted garlic marinara sauce for more flavor. For a more attractive red color, be sure to include the optional tomato paste. This dish is perfect for a casual dinner party.
