This is one of my favorite recipes. It looks very expensive, and it is all handmade and beautiful. Breadfruit, an excellent egg replacer, gives the pasta a rich flavor and imparts a tender texture. These ravioli are shaped by hand, but you can use a ravioli mold if you have one.

Ingredients

Calabaza Squash Filling

  • 3 heaping tablespoons vegan margarine
  • 2 shallots, finely minced
  • 2

Method

  1. To make the squash filling, melt the margarine in a medium saucepan over medium heat. Add the shallots and bay leaves, and sauté for 5 minutes until the shallots start to brown and soften. Add the squash, milk, nutritional yeast, thyme, sage, nutmeg, and salt and pepper to taste. Stir well. Reduce the heat to low and cook until the squash is tender, stirring occasion
