Rum and raisin ice cream is popular in the countries that make their own rum—go figure. There is something about the strong, robust flavor of sugarcane and the sweetness of the raisins. Do try to soak your raisins for a few days in advance. Barbados, Guadeloupe, Curaçao, Jamaica, Trinidad and Tobago, and Guyana all make excellent rums, but I myself have found I most prefer this made with Mount Gay Rum.
