A fragrant dressing, with the muscat scent of elder flowers. Use it to dress cold chicken or avocado salads, or to deglaze a pan after cooking roast chicken.
Put the vinegar and sugar in a bowl and whisk in the oil in a steady stream, until the mixture is well blended. Add the cream, and salt and pepper to taste, and whisk again. Taste and adjust seasonings.
Alternatively, process the vinegar, sugar, and salt and pepper to taste in a blender. Whisk in the oil, then add the cream, taste and adjust seasonings.
