It may seem strange to include a grilled tomato in Pesto Sauce, but it gives a marvellous flavour, balancing out the oiliness of the pine kernels and olive oil. It’s an idea we picked up from Elizabeth David and which we have stuck with ever since.

As well as spooning this sauce over plain or spinach pasta, we occasionally omit the cheese and mix it with breadcrumbs to use as a topping for baked fish
