Ready marinated French and English goats’ cheeses are often stocked by good delicatessens and cheese shops, though they are easy enough to marinate yourself. Although marinated cheeses are best for grilling a firm, fresh goats’ cheese can be used instead. Serve with a lightly dressed green or tomato salad, scattered with toasted pine kernels.
