This is a terrific party piece, pretty to look at, and excellent to eat too. Like the Ballotine of Duck which follows, it appears rather more complicated at first glance than it really is. However, taken step by step, you’ll find that it falls easily into place. Make the day before or first thing in the morning, allowing plenty of time for it to set properly. Then all that is left to do when the time comes is to turn it out and garnish with a few extra herbs. Serve with an
