  • 900 g/2 lb pickling onions, skinned
  • 25 g/1

Method

Arrange the onions in a single layer in a shallow flameproof pan. Dot with goose fat or butter and season with salt and pepper. Cook over a medium heat, shaking the pan from time to time, until evenly browned. Sprinkle with the sugar and continue to cook until the sugar has melted into the fat.
