A garnet-coloured sorbet which is refreshing with a trace of the characteristic bitterness of cranberries. Its true, clear flavour is a real pleasure round Christmas time, when the surfeit of rich and heavy puddings becomes too much.

If you are beating the sorbet by hand as it freezes you might like to fold in two stiffly beaten egg whites at the final stages, to give greater volume and a softer texture.
