The lemon and orange zests give a real boost to white chocolate, making a fondant-like filling for dark chocolate colettes cases or truffles. Serious white chocolate enthusiasts can line cases or coat truffles with white chocolate, though I find this white on white just a little too cloying.
To make Orange Chocolate Colettes, break the ‘coating’ chocolate into squares and melt in a bowl set over a pan of simmering water, making sure that the base of the bowl does not touch the water.
