This recipe comes from the Marks & Spencer Book of Home Preserves and is one of the nicest and most interesting versions I’ve come across. The addition of orange and raisins is a real improvement, giving the cabbage a softer flavour than the sharp shop-bought pickle. It is delicious with bread and cheese, or any cold meats, and I love it with a good Irish Stew or Lamb Hot Pot.
