This is really a pickled ratatouille and, like ratatouille, you can adjust the balance of ingredients according to resources. As long as you keep the total weight of vegetables (excluding the tomatoes) the same, you could reduce the quantity of aubergine or peppers and increase the number of courgettes, say, depending on what is cheap and plentiful or what you like best.

Serve this chutney with bread and cheese, or with thin slices of cold lamb.
