A vegetable that is wonderful braised, even though it is often thought of as being a salad ingredient.


  • 60 g (2 oz) unsalted butter
  • 4 witlof (chicory)


  • Preheat the oven to moderate 180°C (350°F/Gas 4). Grease a flameproof baking dish with one third of the butter. Remove any blemished outer leaves from the witlof and trim and core the root end. This removes some of the bitterness. Wash and place in the dish.
