This melted Swiss (or cheddar) cheese and bacon sandwich, topped with a tangle of caraway-scented, beer-glazed onions, reminds me of pub fare I’ve eaten while visiting England or Ireland. It’s so earthy and inviting. Sometimes I sprinkle Spicy-Sweet Jalapeños on the cheese before it’s melted for a subtle burst of heat.
