The combination of Cheddar cheese, corn, chorizo, onions, and pickled jalapeños makes Mexican farmer-style eggs a tasty and colorful brunch option. Roasted frying peppers, cut in half lengthwise and laid flat in the skillet to cover the bottom before the eggs are poured in, help you to easily loft out each portion. Serve with refried beans and garnish with avocado slices. Once baked, the dish can stay for at least a half an hour in a slow oven.
