Heat a pan to a medium heat and add the vegetable oil and the onion. Start to sweat the onions down, then once they are a little translucent add the butter and season with the sugar and salt.
Continue to cook, reducing the heat if the onions begin to stick to the bottom of the pan. Once they are nice and caramel-coloured — about 20 minutes — take the pan off the heat and leave to cool.<
