We used to make this sweetcorn succotash when I worked under Neil Ferguson at The London. I love it with chicken. It is genius and very simple but shows how the combination of a few great ingredients with a little bit of contrast go together. The first succotash came from the Native Americans, who would make big pots of boiled corn, often including different vegetables.
