The signature dish of Noto, and definitely the most simple thing we have ever served, I could eat this forever. When I am really hungry I crave it: pure seafood indulgence from a humble ingredient, affordable but very luxurious at the same time.
In a small pot, gently warm the crab with the cultured and unsalted butters and the water (which helps it emulsify). Take care not to split the butter with excessive heat. Season with salt and lemon juice as necessary.
