  • 60 g lime juice
  • 30 g

Method

Mix the rice wine vinegar, lime juice, soy sauce and sugar together. In a dry pan, toast the kombu until it is a little smoky, then place it in a jar and pour over the liquid. Store in the fridge and strain before use.
