This is a real comfort dish, probably inspired by tons of takeaways over the years. Making the simple XO sauce gives it a nice edge.
Put a large frying pan over a high heat and add the sesame oil. Once hot, add the beaten eggs and scramble until they are set, then put them in a bowl and wipe out the pan.
Put the pan back over a high heat. Add the vegetable oil and, once hot, tip in the rice. As it starts to pop and heat up, stir in the XO, and then toss in the scrambled eggs. Once they are incorporated, add the peas
