During the course of my career, handmade sausages have been in steady decline as improved manufacturing processes have allowed restaurants to simply send their recipe to a butcher and voilâ — perfection! Making sausages by hand is a messy, time-consuming process but you can’t beat the satisfaction of turning all that mess into plump little bangers. I fully support a sausage revival.
