‘Oh fudge!’ has always felt a rather appropriate kid-safe expletive, as fudge has a lot in common with a toddler: it requires constant supervision and stimulation, and trying to rush it will likely end in a tantrum. Patience is required for this recipe, but you will be rewarded with a goodly amount of moreish morsels.
Put the chocolate in a bain marie to melt, and once fully melted keep it warm over a low heat.
In a medium pot, mix together the double cream, sugar and glucose and begin to cook over a medium heat, stirring all the time to prevent it burning. Probe the mix regularly with a thermometer; once it reaches 108°C, reduce the heat to low and continue to cook until it reaches 120°C.
