Method

Wild leek buds are nature’s candy! Wild garlic and leeks are only in season in Scotland for a few months from the middle/end of February, and towards the end of the season they develop the hard little caper buds that you need here. I salt them before putting them in a small amount of pickling liquid and they keep for months.
