  • 50 g egg yolks
  • 15 g white wine vinegar

Method

With a hand blender, blend the egg yolks, then mix in the vinegar, mustard and a pinch of sugar and salt. Still blending, slowly add enough pomace oil for a thick mayonnaise to form.

Add the onion purée and adjust seasoning as necessary. Place into piping bags until needed.
