Method

Kinako is just roasted soy bean flour, a nutty powder that adds a ton of flavour to dishes.

Whisk the kinako, ground ginger, pomace and sesame oils and rice wine vinegar together, ensuring there are no lumps. Season as necessary. It should be a similar consistency to a pesto.
