  • 365 g milk
  • 150 g live kefir

Method

Mix the milk and kefir in a pan and heat to 35°C. Place in a clean bowl and wrap in clingfilm, then leave in a warm, dry place for 24 hours to get the fermentation started.

Whisk the bread flour into the fermented milk/kefir mix. Make sure it is well combined, then put it into the Kilner jar and seal. Leave for 48 hours in
