Do you have leftover stale bread lying around? I know exactly what you can make with it. Reimagined bread and butter pudding with rhubarb and custard. So good!
Whizz the coconut milk, dates, cinnamon, cloves and cardamom in a food processor or blender until smooth.
Tear the bread into a deep baking dish, then pour the coconut milk mixture over the top. Let the mixture soak into the bread for at least 1 hour, or overnight.

There wasn’t nearly enough liquid for the bread pudding, the ratio to bread wasn’t right. We added another in (400mL) of coconut milk and it was perfect,

Hi Lovely, I am so sorry about that. I find that it depends on what bread you are using. Some soak up more liquid than others. The great thing is that its an easy fix! So glad you enjoyed it. xxx
