This salad reminds me of summers spent in Bulgaria. Watermelon and feta were a permanent summer fixture there. Here I have combined both in a scrumptious way.
Prepare and heat up the barbecue until it is very hot.
Slice the watermelon into 4–6 triangular slices (I like to keep the rind on). Drizzle the slices with oil on both sides and cook on the barbecue for 3 minutes, or until charred.
