This is my take on the classic coronation chicken sandwich. I am using jackfruit here, which has a great stringy texture, along with creamy mayonnaise and other ingredients that make up this classic. The sandwich includes healthy greens and crisps for extra oompf!

Ingredients

  • 400 g (14 oz) tin of jackfruit, drained and rinsed
  • 1 tablespoon olive oil

Method

Preheat the oven to 200°C 400°F/gas 6). Line a baking tray (pan) with baking parchment.

Shred the jackfruit or, if it is in chunks, cut into thin strips or smaller pieces. Spread the jackfruit out on the lined tray, drizzle with the olive oil and season with salt and pepper.
