For the Sous Vide Salmon

  • 4 salmon fillets, each about 6 oz. (185 g)


For the Salmon Brine

Preheat the sous vide water bath to 126°F (52°C).

Remove and discard the skin of the salmon. Generously cover with salt and some fine sugar around the entire fillet for about 10-15 minutes and then rinse in ice water and pat dry.
