Ingredients

  • 200 g salt
  • 12 boned chicken thighs
  • 200 ml date mola

Method

First make up a brine. Put 200 ml water in a small pot with the salt and heat until the salt has dissolved. Pour it into a dish big enough to hold the thighs, and add another 1.8l water. Submerge the chicken thighs in the brine, then set it aside for 30 minutes. This helps keep the chicken moist an
