This has evolved from an amazing carrot cake recipe I got from a friend and colleague when we ran a pub down in England – she made it for Shaun on his birthday and it was the best I’d ever had. This apple and ginger version is equally as good, especially with some blackberry compote and a spoonful of crème fraîche on the side.
