Take a head count of drinkers and prepare a pot of coffee your usual way, making it a bit stronger; then offer this authentic creole café au lait in mugs.

Ingredients

  • Strong, freshly brewed coffee
  • ½ cup milk per person

Method

While the coffee is brewing, bring the milk to a boil in a large, heavy saucepan. Watch it carefully and remove it from the heat the moment it comes to a full boil so that it doesn’t boil over. When the bubbles have subsided, return the milk to the heat and allow it to come to a full boil again, removing it from the heat again so that it doesn’t boil over.

Strain the milk into the mugs
