Most Southerners adore greens, but it is a misconception that we cook greens to death. All greens are cooked until tender. Collards may take as long as two hours, but tender young turnip greens should be done in about thirty minutes. Greens are traditionally served with a cruet of hot pepper vinegar (see Condiments).
