This combination of grains provides earthy flavors and a contrast of textures to this lamb dinner. Serve it with roast meats, poultry, or game.


  • 8 cups water
  • 1 teaspoon salt

Bring the water to a boil in a large saucepan. Add the salt, barley, and wild rice. Cover, reduce heat, and simmer for about 45 minutes, or until the barley is tender and the water has been absorbed. Remove from the heat and allow to stand for at least 5 minutes before serving.
