The recipe for these irresistible cookies made with olive oil was adapted from Popular Greek Recipes, published by the Greek Ladies Philoptochos Society in Charleston in 1957. They have a delicate crumb and are not too sweet. Serve them with a glass of port. The dough can be refrigerated for several weeks in an airtight plastic bag and baked at a later date.
