When the first of the pole beans and new potatoes bit the markets in the spring, this dish appears in both fancy city and country homes throughout the lowcountry. Ty to find tender beans without a heavy string, such as Kentucky Wonders, and do not overcook them. The small amount of water may be surprising, but the recipe works perfectly well.
