Hoppin’ john, my namesake, becomes a salad in this version. In the lowcountry, the traditional bean for the disk is the cowpea, or dried field pea; more than three hundred varieties are grown. Throughout most of the South, though, the widely available blackeyed pea is used. You can use fresh or frozen peas, but don’t cook them with any seasoning.
